Iceberg Chopped Salad
I love a good ice berg wedge but it’s hard to eat them and get the flavors from the salad in every single bite! I decided to make a chopped version with the classic flavors of an iceberg wedge, but make it plant based and fully focused on giving your body the best ingredients in bite size combos. You may think ice berg isn’t as valuable as other leafy greens, but ANY and ALL leafy greens are amazing supports for digestion and weight loss.
I focus on leafy greens every single day and feel lost without out them lol. They’re a must have for health.
WHAT YOU NEED:
Iceberg lettuce, washed
Grape tomatoes
Scallions (I used two)
Vegan feta cheese
Fresh chopped parsley (flat leaf)
Lemon
Salt
Everything but the bagel seasoning from Trader Joe’s (I didn’t use this initially but added it later and it was great for a crunchy texture)
MAKE IT:
Wash your produce, and start chopping!
Set a large bowl next to your cutting board and slice onions, tomatoes, lettuce and parsley. I started with the onions and tomatoes (halves) and then layered the rest on
Chop to your desired size (family inside joke apparently everyone likes different sizes of lettuce leaves enough to complain about them being too big or small…what.)
Toss in a bowl, add zest from lemon and juice from half, add salt or Everything but the bagel seasoning (that includes salt so don’t overdo it!)
There you are, an easy, simple wedge salad all chopped up and easy to eat! Eat as is, or top with your favorite clean proteins or plant proteins!
