EASY WARM CAULIFLOWER RICE BOWL l PLANT FOCUSED RECIPE FOR HEALTH & WEIGHT LOSS

Hey guys!

This is one of my favorite ways to use frozen cauliflower rice. It’s something I always keep on hand for an easy, quick plant focused meal. (tip: I buy the Organic frozen cauliflower from Costco. Their bags are 10oz vs the typical 5-6 oz in the regular grocery stores so you get way more for your money)

How eating this recipe helps you reach your health and body goals:

  • Cauliflower is a powerful antibacterial and antiviral food. It will fight pathogens in your gut or other areas of your body by killing them off so that your body can thrive and work more efficiently.

  • Eating lots of non-starchy veggies is the key to healthy digestion and elimination, I added leafy greens to this because they are so powerful in creating health inside.

  • Everything in this recipe is made from plants, no ingredients that would feed a pathogen therefore it’s helping you move the needle forward towards results and being high plants, the ingredients are recognized by your body and easy to digest.

  • It’s food combined so your body doesn’t need to slow down to break it down.

INGREDIENTS:

  • 1 10 oz bag frozen cauliflower rice

  • 1 can organic diced or stewed tomatoes

  • Dried oregano, garlic, onion powder, salt

  • Low sodium organic veggie stock

  • 1 medium zucchini diced

  • handful of dark leafy greens

  • Vegan feta (I use Violife brand)

  • add fresh cilantro or parsley to top off!

NOTES:

  • You can batch cook the frozen cauliflower rice ahead and then this recipe takes even less time, or simply put in a glass dish in your refrigerator to allow it to thaw ahead of time

  • Substitute another vegan cheese if you want, Violife also make amazing plant based mozzarella

  • Eat this as your meal OR add an animal protein if you want, it will food combine well. Or you can make this more dense/rich and add quinoa or rice if you want to, that also combines with these veggies.
