Asian Shrimp Lettuce Wraps

 

Today was a day I was soooo hungry when I got home that in fact my lunch was so late that it became an "early bird" dinner! It's super easy to make something fast though, when you have stocked your refrigerator with certain staples, things that will make your life easier in a dinner pinch :) I never use recipes, I just make my own up over and over as I go, #creativefoodcombos. These lettuce wraps were done in about 5 minutes because I had a few go-to items. So here's what I made:

 

 
 

 

INGREDIENTS:

  • Riced Cauliflower
  • Bibb Lettuce wraps
  • Wild Caught baby shrimp
  • Avocado
  • Tangerine Dressing
  • Himalayan sea salt

The fast part was that I bought the cauliflower already 'riced' and seasoned at Whole Foods. They sell it in the ready to go or "Paleo" section by the veggies. It already has ginger, cilantro and scallions in it.

DIRECTIONS:

  1. Heat your pan over the stove top to medium heat, spritz with olive oil, season with salt
  2. Add the baby shrimp (I keep mine in a glass container in the freezer) I didn't even thaw them out, just added to the pan
  3. Stir until browned
  4. Place into lettuce wraps and top with cubed avocado
  5. Drizzle with tangerine vinaigrette

 

Now if that' s not doable I don't know what is! These are pretty enough to serve for apps or a dinner party. Fast, healthy and easy. Just my style. Try it out and let me know what you think! Share this recipe with your friends! Go to the Facebook group and tell me what you think there!
