Warm Mushroom & Quinoa Pasta Salad with Avocado Dressing

This AMAZING salad I created for a recipe contest with Tresomega Nutrition’s organic quinoa pasta! They were kind enough to send me a few varieties and I adore their ingredient list!

When you shop for quinoa pasta the number one thing you want to be aware of is that often it also contains other flours, specifically corn, but this brand is made simple of quinoa, amaranth, and rice. That’s all.

This recipe is simple, quick and gets better the longer you let the flavors melt together.

INGREDIENTS:

  • 1 package Treseomega Quinoa Elbow Pasta

  • Water

  • Himalayan salt

  • 1 package mushrooms

  • 1 fennel bulb

  • Olive oil

  • 2 scallions

  • Raw sesame seeds

  • Black olives, sliced

  • 1 1/2 avocados

  • 2 lemons, zest and juice

  • 2 cloves garlic

  1. Wash fennel bulb and cut off end and outer layer, chop into small diced size pieces

  2. Heat up a small sauce pan of water on high and bring to a boil

  3. Once boiling, season with salt and add box of quinoa shells

  4. Stir frequently, turn heat down a little so that the water won’t boil over, cook as to package instructions (I found it cooked much faster, about 6-7 minutes)

  5. Pour noodles into a colander and let cool

  6. In a saute pan, heat to medium/low heat and spray with olive oil, once hot, add sliced mushrooms, spray with olive oil mister again and season with dried oregano, once mushrooms begin to brown, add salt and stir frequently until browned and cooked through.

  7. Remove mushrooms from heat, add noodles and cooked mushrooms and fennel to a large bowl

  8. Open olives, slice if not already and add to noodles

  9. Wash lemons, zest over the noodles and veggies, then cut

  10. In a blender add: avocado; 3 tsp olive oil; salt; garlic, 1/2 cup or large handful fresh cilantro, 1 chopped scallion, and juice of two lemons. Blend, add a little water as needed to loosen and allow to blend, keep seasoning with salt to taste

  11. Pour avocado dressing over pasta and veggies, mix in well, add olives.

  12. Put entire mixture into a serving bowl, top with sesame seeds, more cilantro and a 1 more sliced scallion

Serve warm, or put in the refrigerator and let set and serve cold!
