Cauliflower Rice Stuffed Peppers

VEGAN stuffed peppers that are also GRAIN FREE!

I don’t have anything against rice except that it’s just not as healing as a vegetable based alternative. So these are more vibrationally intense AND lighter on the gut as well. Leaving room for dessert :)

Ingredients:

  • 1 yellow bell pepper (2)

  • 1 10oz bag organic riced cauliflower (frozen)

  • 1/3 yellow onion, diced

  • 3 stalks celery, diced

  • Garlic powder

  • Himalayan sea salt

  • Avocado oil

  • Fresh cilantro

  • Scallions

  • Coconut aminos

DIRECTIONS:

  1. Heat deeper dish saute pan over low heat, once warm, spray with avocado oil and add diced onions and celery, season with salt and garlic powder and stir frequently until softened.

  2. Once celery and onions are cooked down, add bag of cauliflower rice and season again with salt, garlic powder

  3. Stir as this all cooks together, while cooking, cut peppers down center and remove the top and ribbing, 2 large peppers will hold the contents of the rice and veggies

  4. Once cauliflower mixture is finished, add chopped cilantro and scallions, and then scoop into halves of peppers and drizzle with coconut aminos.

  5. Grate vegan parmesean over the top of your stuffed peppers and serve

NOTE: you could place these in the oven or under the broiler to warm up a little if you want, but the vegan parm will melt into the warm cauliflower. AND it’s sort of nice to have the peppers raw as they are a little sturdier and more activated nutritionally.
