Rainbow Veggie Platter - my favorite appetizer!
If this isn't colorful I don't know what is! While this isn't exactly the same as my favorite appetizer from my favorite restaurant - True Food - it's pretty close! I made this last Sunday for dinner for myself and Heath. We had been traveling in the car all weekend and went out for a long walk and weren't in the mood for cooking or eating anything heavy. So I said, "I wish we could go to True Food!" PS I say this multiple times per week, but I had all of this in my refrigerator and whipped it together for a super nutrient dense dinner. Show this to your children who say they don't like veggies!
Just because it's dinner time doesn't mean you have to always eat meat! This platter is perfect for a #MeatlessMonday or an appetizer for a get together or party.
What's on the plate:
- Rainbow radishes
- English cucumbers
- Rainbow carrots: orange, yellow
- Beets
- Radishes
- Snap peas
- Orange bell peppers
- More cucumbers
- More watermelon radishes
What's in the bowls:
- Spicy Avocado Hummus (HOPE brand - great deal at Costco)
- Homemade coconut curry dip/dressing (I used this for thai inspired noodle bowls, salads and as a great spread)
- Salsa
I can think of lots more options that would make this platter even more beautiful: colorful tomatoes, purple carrots, red peppers, jicama...oh and avocado!!
