Lunch Box Turkey Wrap
Lunch time for most of us needs to be something quick. For my husband, it saves him a lot of time, and money as well, if we can pack him a lunch to take to work. With only a few select ingredients he can have a healthy wrap on the go.
Ingredients:
- Flat-out 100% Whole Grain Flatbread
- Seedless english cucumbers (2)
- Low-sodium preservative free turkey breast
- Arugula
- Avocado slices
- Tomato slices
- Salt & Pepper
- Edamame hummus
Start with the flatbread laid out on a cutting board. Spread edamame hummus across the inside of the wrap, leaving an inch and a half border around. Slice the cucumbers length-wise and the tomatoes into rounds and season with salt and pepper. Spread 2-3 oz of turkey on the flatbread, top with tomatoes, cucumbers, avocado slices and arugula.
Lift up the short ends of the flatbread and begin rolling the long way. Place with the edges down and then cut on a diagonal in half. Wrap up in aluminum foil and it's ready for the lunch box. To make this lunch complete add fruit: whole pear; a serving of Nut Thins Pecan crackers; and a side of low-fat cottage cheese with fresh cracked salt and pepper. Make sure you include an ice pack or put the lunch in the refrigerator when you get to your destination.

Hy-Vee: low sodium turkey
Costco: Flatout flatbreads ( you can buy 4 packages in one for about $5-6 instead of about $3 for one package in the grocery stores). Avocados: buy a bag for about $1 per avocado.
