Kale Egg Broth Bowl
I've been seeing broth bowls with combinations of veggies and proteins on various menus lately so I decided to make one for lunch, instead of my typical egg & veggie dish. This was so easy, it took about 10 minutes to make and you can infuse tons of variety into yours.
INGREDIENTS:
- Leaves from 4-5 large stalks of lacinato kale
- 2 carrots
- 2 eggs
- 2 small zucchini
- Dried curry
- Himalayan sea salt
- Olive oil spray
- Bone broth
- Fresh parsley
- 1/2 shallot
- Top with feta if desired
DIRECTIONS:
- Wash and tear kale off the stalk, pat dry
- Crack eggs into small bowl, whip with a fork, add a splash of water and salt
- Heat crepe pan over medium heat, once hot, add egg mixture
- Let set until you can fold it in half to finish cooking
- Remove egg from pan
- Spritz pan and chopped zucchini and shallots with olive oil and salt
- Saute until browned, add in kale leaves to mix together and cook kale lightly
- Remove from pan and then repeat with chopped carrots, add salt and curry
- Let carrots cook until slightly browned, then add in bone broth to finish steaming
- Pour broth and carrots into bowl with the other ingredients
- Top with fresh parsley and feta

This is just one of the recipes I'm using to ease into my 7 day detox starting soon - remember bone broth is great for your skin :)
Other ideas for a broth bowl:
- Add quinoa, lentils or other legumes or grains
- Use veggie or chicken broth, or try a miso broth for an asian inspired flavor
- Add in roasted seaweed (I actually did add in nori after I cooked mine)
- Toss in jarred or grape tomatoes
