Kale Egg Broth Bowl

 

I've been seeing broth bowls with combinations of veggies and proteins on various menus lately so I decided to make one for lunch, instead of my typical egg & veggie dish. This was so easy, it took about 10 minutes to make and you can infuse tons of variety into yours.

 

INGREDIENTS:

  • Leaves from 4-5 large stalks of lacinato kale
  • 2 carrots
  • 2 eggs
  • 2 small zucchini
  • Dried curry
  • Himalayan sea salt
  • Olive oil spray
  • Bone broth
  • Fresh parsley
  • 1/2 shallot
  • Top with feta if desired

DIRECTIONS:

  1. Wash and tear kale off the stalk, pat dry
  2. Crack eggs into small bowl, whip with a fork, add a splash of water and salt
  3. Heat crepe pan over medium heat, once hot, add egg mixture
  4. Let set until you can fold it in half to finish cooking
  5. Remove egg from pan
  6. Spritz pan and chopped zucchini and shallots with olive oil and salt
  7. Saute until browned, add in kale leaves to mix together and cook kale lightly
  8. Remove from pan and then repeat with chopped carrots, add salt and curry
  9. Let carrots cook until slightly browned, then add in bone broth to finish steaming
  10. Pour broth and carrots into bowl with the other ingredients
  11. Top with fresh parsley and feta

This is just one of the recipes I'm using to ease into my 7 day detox starting soon - remember bone broth is great for your skin :)

Other ideas for a broth bowl:

  • Add quinoa, lentils or other legumes or grains
  • Use veggie or chicken broth, or try a miso broth for an asian inspired flavor
  • Add in roasted seaweed (I actually did add in nori after I cooked mine)
  • Toss in jarred or grape tomatoes
