Asian Slaw Salad with Grilled Halibut
Last night we had some friends over for dinner, which is fun for me because I love cooking and it's nice to have the ingredients I want in my recipes and no well...unknowns!
My birthday is actually tomorrow but to celebrate,we usually have a double birthday dinner with my friend because her birthday is really close to mine.
Here's what I made and how you can have totally flavourful dinner parties and still eat clean:
A huge colorful salad:
Always a staple so you get lots of nutrients and lots of food that isn't heavy. This salad was inspired by one from Minimalist Baker.
Ingredients:
- Sliced purple cabbage
- Shredded carrots
- Sliced jicama
- Chopped mixed greens: spinach, kale, baby chard
- Spicy Chickpeas (this is my shortcut...keep reading)
Dressing: All I did was mix up a spoonful of tahini, almond butter, and sesame oil and sea salt!I grilled halibut and scallops for the protein with a delicious, light marinade.
Marinade Ingredients:
- Olive Oil
- Sea Salt
- Coconut Aminos
- Rice Vinegar
- Sesame Oil (just a dash)
- Lime Zest & Juice
- Grated garlic
- Grated ginger root

You can roast your own chickpeas with your own flavors or find the ones I used in the store. These are the ones I used and you can find other flavour profiles too!
