Don’t you love the cashiers at Whole Foods?

 

I walk up (again yes I was there yesterday and I went in for ONE thing, Dalton’s @hellokabrita goat milk formula and came out with a cartful. And I forgot my bags. Duh. And I hate having bags and more bags so I say to this guy:

 

“So this might be weird but can I just put all of this stuff back in my cart because I don’t want anymore bags and I have this thing from the Container store in the back of my car.”

Him: haha people ask me that all the time. 
What are you doing with the aloe? 

 

I LOVE when they ask me this….about anything!

“Well, actually I’m making this really cool citrus dressing because the aloe creates a lot of volume and froth and makes it super creamy, AND it’s so good for your gut OH but also don’t eat it without other flavors because it’s SO BITTER.”
Him: cool, people always tell me different things I’ve never heard of and I know (about the bitter)
 

So here it is an amazing LIGHT, CITRUS, FRESH and GUT healing salad dressing that goes really well with crunchy greens and also cooling and light veggies.

 

I'd also use this as an amazing marinade for seafood, probably mahi, cod, or halibut or even shrimp.

 

INGREDIENTS:

  • 1  3-4" chunk of aloe gel
  • A few inches of ginger root (I keep mine in the freezer)
  • Himalayan salt (pink)
  • 2 small lemons, squeezed
  • 2 limes, squeezed
  • 1 TBSP avocado oil
  • Drizzle of raw honey

 

DIRECTIONS:

1. Wash, slice and cut the lemons and limes and squeeze into the blender

2. Let the ginger thaw out if frozen a little and slice off a chunk

3. Add remaining ingredients and blend.

Season to taste, if it's too limey :) then add more avocado oil, add more or less salt, more honey if needed.

I tossed this on a light green salad with:

  • Chopped romaine
  • Snap peas
  • Cucumber
  • Mangoes
  • Raw sesame seeds
