5 Ingredient VEGAN DATE cookies!
This recipe is SO EASY you guys!
And I didn't create it from scratch, so let's give credit to Lisa Hayim, an RD whose website is called The Wellness Necessities for sharing this amazingness with the world!
I changed the recipe up a tiny bit because of ingredients I had or didn't have on hand and because I wanted to create a little bit sweeter cookie. I made the original without any organic stevia drops, and I like the second batch better WITH IT!
These are great because they are bite size, so easy to make, quick and will leave you happily not worried about SUGAR harming your body or whoever you feed these to!
INGREDIENTS:
1 cup Tigernut flour
3/4 cup almond flour
1/2 cup vanilla unsweetened almond milk
1 tsp baking powder
2-3 dates, chopped
3 drops French Vanilla organic liquid stevia
Directions:
Preheat the oven to 375 degrees F.
Combine all the dry ingredients in a bowl.
Add in the liquid and mix well.
Roll into balls about the size of a ping pong ball.
Flatten to about 1/2 inch high with palm as you place onto the baking tray.
Bake for 15-20 minutes.
These seriously turn out just like photographed. The original recipe was sans stevia like I said and also used chocolate chips instead of dates. I didn't have chocolate chips but if I wanted to make a 'chocolate chip' cookie I would get cacao nibs instead.
You can use this base and try adding dried cherries, apricots, cashews, walnuts or whatever you like! I used New Barn almond milk because it's the cleanest I can find :)
